About The Harvest
The 2025 growing season delivered ideal conditions for Sauvignon Blanc at Capaia. A dry spring followed by moderate summer temperatures allowed for slow, even ripening, preserving vibrant acidity and aromatic clarity. Grapes were harvested early to capture freshness and minerality, resulting in a wine with lifted tropical notes, fine texture, and promising longevity.

In The Cellar
The grapes were destemmed and crushed with skin contact overnight before being pressed. The wine was then cold fermented for about 20 days, using different yeast strains. Following fermentation, the wine spent another 4 months on fine lees, before bottled.
